Discover how to expertly prepare a range of British dishes, with a modern flair. From foams to Buerre Blanc, this course aims to fine-tune your cooking and presentation techniques; perfect for celebrations and special occasions.

The Modern British cookery class will provide you with skills that enable you to prepare an impressive selection of modern dishes using techniques that you can apply to countless other dishes and cuisines.

This course pays particular attention to the more advanced techniques and presentation styles; taking your cooking to the next level and finishing your food with the 'wow factor'.

Dishes include:

  • Leek and gruyere tart 
  • Roasted cod with pea puree and a saffron foam served with buttered spinach, crushed new potatoes and a tomato buerre blanc
  • Pork fillet wrapped in parma ham, Aspalls cider cream sauce with Suffolk wholegrain mustard
  • Medley of summer vegetable including popped broad beans, asparagus and baby turnips
  • Sugar nests with raspberry sorbet
  • White chocolate cheesecake

The Modern British one-day course begins at 9.30am with morning coffee and a friendly atmosphere. You will then be shown to the fully-equipped kitchen and assigned your own workspace, before your chef will take you through the course menu and how the rest of your day will run.

The step-by-step tuition is fun and easy to follow and the cookery team will be available for assistance throughout. You will learn everything you need to produce the perfect dish – from basic knife skills to creating the perfect saffron foam.

Finally, your efforts are awarded with a sit-down meal and glass of wine at 3.00pm. This is the perfect chance to enjoy your own cooking and share hints and tips with group.

Please note Children over the age of 8 years old are welcome to attend and participate in any of our classes at the full cost of a place but MUST be accompanied by 1 paying adult.
