Malaysian food, the unsung cuisine at the heart of South East Asia, is rich in flavour and diversity. If you’re passionate about food, you will not be able to help yourself becoming passionate about Malaysian food. 

Covering a full spectrum of cuisine from Portuguese, Arab and Indian to Chinese, Thai and Indonesian, Malaysian food is a fascinating journey of all that is ‘truly Asia’ in one nation.

Join Norman Musa, Europe’s leading award winning Malaysian chef for an inspired day in our kitchen learning to create vibrant, healthy dishes using ingredients that you can easily find in any supermarket.

Dishes on the day will be:

Session 1  Murtabak Daging & Kuah Kari | Beef Murtabak & Curry Sauce

Murtabak is a popular street food snack commonly sold at the night markets in Malaysia. The flat parcel is made of spring roll wrappers (alternative to the roti canai dough) and filling of minced beef, diced onion, potato, spices and eggs, served with curry sauce that Chef Norman will teach the quickest way to cook.

Session 2 Cucur Udang & Kuah Kacang |  Prawn Fritters & Peanut Sauce (Demo)

Crispy prawn fritter, another favourite street food for afternoon snack that is made of plain flour, ground turmeric, bean sprouts, garlic chives and prawn, served with peanut sauce.

Session 3 Kari Ayam Kapitan | Chicken Kapitan Curry

One of the most complex curries to cook in Malaysian cuisine that comprises of more than 20 ingredients, rich in flavour as it creates different layer of flavour. The curry is heavily infused with lemongrass, galangal, coconut, chillies and many more ingredients that Chef Norman will share some tips how to prepare them.

Session 4 Kari Laksa Makanan Laut | Seafood Curry Laksa

A medley of prawn, calamari and mussels cooked in a curry gravy, spinach, bean sprouts and tofu. Chef Norman will share his knowledge how to prepare the curry paste from scratch and how to cook a beatiful bowl of curry laksa.

The day begins at 9.30am and we invite you to join us with a welcome tea or coffee in the cookery school’s dining room from 9.00am, where you will have a chance to meet your fellow delegates and chef. Your chef will talk you through the class menu and how the day will run before you are assigned a workspace in our fully equipped kitchen, overlooking the beautiful estate at Braxted Park. The step-by-step tuition is fun and easy to follow and the cookery school team will be available to assist you throughout the day.

At the end of a full day of cooking, everyone’s efforts will be rewarded with a glass of wine and a sit-down meal that has been cooked during the day, where hints and tips can be shared with the group while enjoying the food that you have prepared.

Please note Children over the age of 8 years old are welcome to attend and participate in any of our classes at the full cost of a place but MUST be accompanied by 1 paying adult.
