On this one day cookery class you will learn to create a wonderful array of Lebanese street dishes under the expert guidance of chef Hulya Erdal.With a cultural heritage dating back more than 7000 years, Lebanon is a country steeped in a rich history with a delicious cuisine to match. Conveniently placed between the Mediterranean and the Middle East, colonisation from the Ottomans and French, have strongly influenced and given a real diversity to the food of this nation. Lebanese street food is much revered for its broad selection of flavours from its base of olive oil, garlic, lemon and onions to the use of spicy harissa and chilli to flavour meat, pulses, vegetables, tahini and yoghurt based dips and dishes.  

Join Hulya Erdal on this inspired day of cookery and immerse yourself in the culinary delights of Lebanese street food mastering authentic pastries, dips and street snacks. You will create: 

  • Chicken Rakakat  – Deep fried pastry filled with marinated chicken, garlic, shallots and harissa.
  • Falafel Scotch Egg – The traditional chickpea pattie gets a British twist with the addition of an egg in the middle.  
  • Batata Harra – Sauteed potato with red pepper, chilli, garlic, coriander and cumin.
  • Fatoush Salad – Gem lettuce, tomato, cucumber, spring onion, mint, radish, parsley and tossed crispy pitta bread with sumac, red wine vinegar and olive oil salad. 
  • Kibbe Lahme – Deep fried lamb and cracked wheat parcels filled with onions, minced meat and roasted pine nuts. 
  • Labneh – Strained yogurt with dried thyme and olive oil. 
  • Moujaddarah  – Puree of lentil and rice topped with fried onion. 
  • Muhammara – Roasted red pepper and toasted walnut dip. 
  • Battered Prawns – Chilli spiced prawns fried and served with tarator (tahini) dip. 
  • Sambousek Cheese – Crumbly short pastry filled with grated halloumi, onions, mint and parsley oven baked.

The day begins at 9.30am and we invite you to join us with a welcome tea or coffee in the cookery school’s dining room from 9.00am, where you will have a chance to meet your fellow delegates and chef. Your chef will talk you through the class menu and how the day will run before you are assigned a workspace in our fully equipped kitchen, overlooking the beautiful estate at Braxted Park.

The step-by-step tuition is fun and easy to follow and the cookery school team will be available to assist you throughout the day.

At the end of a full day of cooking, everyone’s efforts will be rewarded with a glass of wine and a sit-down meal that has been cooked during the day, where hints and tips can be shared with the group while enjoying the food that you have prepared.

Please note that the dishes listed may vary due to the availability of fresh produce as a result of seasonal changes.

Please note Children over the age of 8 years old are welcome to attend and participate in any of our classes at the full cost of a place but MUST be accompanied by 1 paying adult.
