Imagine Game and you probably envisage ruddy autumn sunlight, heathland, forests, moors, barking dogs, crackling bracken and the report of guns. And later, the delicious taste of perfectly cooked game, accompanied by a delicious glass of wine.

Join BBC MasterChef winner, Peter Bayless and discover the secrets of how to cook a variety of game to perfection.

Game is healthy, rich in flavour, low in fat and high in protein. Its secrets are accessible to anyone with knowledge and training.

Dishes include:

  • Roasted pheasant and pumpkin soup with various handmade breads
  • A partridge in a pear tree - Roast partridge with sultanas, braised vegetables and caramelised pear
  • Venison cooked in red wine with bitter chocolate and a hint of chilli served with creamed potato, celeriac and apple mash and green beans
  • 'Light as a feather' - Vanilla, orange marmalade and whisky pudding with crème Chantilly

Today, farmed game is widely available, and Britain is seeing renewed interest in its preparation and cooking. Here at Braxted Park we run our own game shoot and our game is of a standard second to none. Our 2000 acre shoot has a reputation of being one of the highest quality in East Anglia and is renowned for its atmosphere and impeccable management.  

Getting the most out of game requires specialist skills. Young meat requires quick roasting at higher temperatures, while older game is best prepared with slow cooking. Whether farmed or hunted, learning how to cook game to its best requires the professional knowledge you will learn from your day at The Cookery School at Braxted Park. 

The day begins at 9.30am and we invite you to join us with a welcome tea or coffee in the cookery school’s dining room from 9.15am, where you will have a chance to meet your fellow delegates and chef. Your chef will talk you through the class menu and how the day will run before you are assigned a workspace in our fully equipped kitchen, overlooking the beautiful estate at Braxted Park.

The step-by-step tuition is fun and easy to follow and the cookery school team will be available to assist you throughout the day.

At the end of a full day of cooking, everyone’s efforts will be rewarded with a glass of wine and a sit-down meal that has been cooked during the day, where hints and tips can be shared with the group while enjoying the food that you have prepared.

If you are using a Gift voucher to pay for this course, we charge a subsidy of £20.00 due to the cost of the ingredients.
