If you've holidayed in Turkey, Greece, Egypt or any other Eastern Mediterranean or Middle Eastern country then you would have been enticed and hooked on the many small dishes laid out on large tables, most often served with lots of alcohol and collectively known as Meze/Mezze. Who can resist the indulgence and eye popping beauty of such delicious offerings where variety is the key.  Come on a trip with us and tingle those taste buds with memories of village tavernas, local street sellers and late balmy summer nights.

Dishes to be prepared:

Baked Hummus  – Most Mediterranean influenced cuisine will have a version of Hummus, whether it's Tahini heavy or loaded with chickpeas.  But how about if you go one better and bake it? This is divine topped with sauteed lamb, walnuts and paprika.

Goat's cheese dip – A not so widely known Turkish creamy dip of blended soft goats cheese with almonds, herbs, tomato paste, garlic and crushed chillies.

Tzatsiki – Also known as cacik in Turkish, this all time classic is bursting with the flavours of pureed garlic, shavings of cucumber and mint all blended with creamy Greek yoghurt.

Kisir – much like Tabbouleh but with the added flavour of sweet red pepper paste or tomato paste, this is the Turkish version and excellent as a buffet or meze centerpiece for everyone to tuck into. Great for lunch drizzled with yoghurt and topped with jewels of pomegranate kernels.

Pide – Originally a Levantine food, this is the Middle Eastern/Turkish version of pizza! a soft flat dough is topped with a range of ingredients including spinach, cheese, salami and mince then half folded on the edges to create and long oval shaped, open pizza. Baked in the oven and served sliced for sharing.

Borek – Soft filo style Turkish 'Yufka' pastry is stuffed with feta cheese and parsley or spinach then wrapped as fingers or triangles and fried till crisp or brushed with melted butter and baked in the oven, they are delicious!

Kibbeh  – These typical Middle Eastern cone shaped morsels are the perfect finger food. Bulgur cracked wheat is mixed with mince and then shaped and stuffed with pistachios, onions and mince. Fried till golden and crisp, they never last long!

Sweet and sour okra – A tangy sweet flavoured dish of lush green okra, sauteed in lemon juice and brown sugar finished with pomegranete molasses.

Ezme salad – A smokey blend of roasted or bbq'd peppers and aubergines, finely chopped and mixed with roasted, pureed garlic, olive oil, lemon juice and herbs.

Marinated chicken wings – These cute little wings are perfect for kids and adults alike. Marinated in a selection of Mediterranean style herbs and spices, they're great made on the bbq or simpy roasted in the oven.

Chilli pesto stuffed sardines - These little fishy bites are the perfect meze dish. Sardines are marinated and stuffed with a crushed garlic, chilli and pepper paste blended with feta cheese and then drizzled with olive oil and baked or grilled. Great with crusty bread and a squeeze of lemon juice. 

The day begins at 9.30am and we invite you to join us with a welcome tea or coffee in the cookery school’s dining room from 9.00am, where you will have a chance to meet your fellow delegates and chef. Your chef will talk you through the class menu and how the day will run before you are assigned a workspace in our fully equipped kitchen, overlooking the beautiful estate at Braxted Park.

The step-by-step tuition is fun and easy to follow and the cookery school team will be available to assist you throughout the day.

At the end of a full day of cooking, everyone’s efforts will be rewarded with a glass of wine and a sit-down meal that has been cooked during the day, where hints and tips can be shared with the group while enjoying the food that you have prepared.

Please note that the dishes listed may vary due to the availability of fresh produce as a result of seasonal changes.

Please note that children over the age of 8 years old are welcome to attend and participate in any of our classes at the full cost of a place but MUST be accompanied by a paying adult.
