Mark has spent over thirty years in the catering world as a professional chef. He has worked in reputable restaurants and hotels in Essex and London, and was head Pastry Chef at the Boatyard, Leigh-on-Sea, voted “Best Restaurant in Essex” by listeners to Essex Radio. He has, in a long and varied career, cooked alongside such revered chefs as Michel Roux, Gary Rhodes, and Marco Pierre White. “Preparing and cooking food from fresh produce is one of life’s great pleasures, and positive feedback from customers and guests is motivating and rewarding.”
