Festive Christmas with Mark David

During the festive period we do more entertaining than at any other time of the year. Festive Christmas is  a hands on cooking experience, this course shares the secrets of preparing a range of delicious dishes whilst effortlessly having the time to entertain, relax and enjoy the party too.

Your guests will be amazed at your ability to multi-task by being the perfect host, providing humorous conversation and serving up great tasting dishes (but they won’t know just how easy it is!)

The Festive Christams one-day cookery course will teach you how to produce a three course meal with minimum effort and maximum effect. Using the finest ingredients and a lot of hints and tips to make the preparation easier along the way, this course is like gold dust on your quest to be the perfect host or hostess.

Here is a taster of the menu (although subject to change at the Chefs discretion) – just to whet your appetite: 

  • Roast Local fresh Turkey.
  • Sausage and Lemon Thyme Stuffing.
  • Roast Potatoes with Goose fat.
  • Loose Chestnut Stuffing.
  • Carrot, Butternut Squash and fresh Sage Mash..
  • Fresh Cranberry and Orange Sauce.
  • Spinach and Leek Roulade.
  • Smoked Salmon Pancake Pinwheels.
  • Meringue and sweetened Chestnut individual towers.

The day begins at 9.30am and we invite you to join us with a welcome tea or coffee in the cookery school’s dining room from 9.00am, where you will have a chance to meet your fellow delegates and chef. Your chef will talk you through the class menu and how the day will run before you are assigned a workspace in our fully equipped kitchen, overlooking the beautiful estate at Braxted Park. The step-by-step tuition is fun and easy to follow and the cookery school team will be available to assist you throughout the day.

At the end of a full day of cooking, everyone’s efforts will be rewarded with a glass of wine and a sit-down meal that has been cooked during the day, where hints and tips can be shared with the group while enjoying the food that you have prepared.
