Jamie Oliver’s FIFTEEN visit Essex

 Three family-owned companies (Marriage’s, Maldon Salt Company and The Cookery School at Braxted Park) joined forces to welcome Jamie Oliver’s FIFTEEN apprentices for a taste of the finest produce the county has to offer.

The day started with the apprentices visiting Marriage’s mill in Chelmsford and learning how their award-winning flour is made. This was followed by a visit to Maldon Salt Company’s saltworks, where they tried their hand at traditional salt making, and raked a pan of the world famous pyramid flakes.

The final visit of the day was to us here at The Cookery School where a cooking challenge took place, against the clock. The apprentices had to make a three course meal showcasing the finest Essex ingredients – Marriage’s flour and Maldon salt - in our state-of-the-art kitchens.

The challenge was set for the apprentices to work in teams of three and cook and present a three course meal that was both seasonal and showcased both Marriage’s flour and Maldon Sea Salt in less than 2 hours. The dishes were then tasted by the judges, Hannah Marriage (Marriage's), Sharon Sonnex (The Cookery School manager), Victoria Spencer Allen (Maldon Salt Company) and the winning team were chosen.

The winning team consisted of Aidan, Ibee and Nickola and the created the following dishes:

Starter - Salted Smoked Salmon served on handmade Rye crackers
Main course - Thyme salted steak with triple cooked chips and beer battered onion rings
Dessert - Salted caramel banana cake
