Enjoy this recipe for traditional Christmas turkey

Traditional Christmas Turkey

Here we share with you Mark David’s recipe for delicious and stress-free Christmas turkey. The cooking method assumes a 2pm Christmas dinner, but you can adjust the timings accordingly.

You will need:  

  • 25lb fresh turkey

  • 1 fresh orange cut in half

  • 1 fresh apple cut in half

  • butter for basting

  • seasoning

  • ½ bottle of port


  1. Stuff the turkey with the orange and apple.

  2. Generously smear the turkey with butter and season well. Put it into a pre-heated oven at 200C and roast for 45 minutes.

  3. Remove from oven and double wrap in foil, just tucking the foil gently underneath the bird, be sure not to completely enclose it.

  4. Pour the port into the tin.

  5. Put the turkey into the oven turned down to 120C for about 10 hours overnight. (Do this no later than 1am on Christmas morning if you’d like a 2pm Christmas dinner). Note that a 20lb bird needs about 9 hours at lower heat, and a 12-15lb bird needs about 7 to 8 hours at 120C.

  6. Remove the turkey from the oven and leave to rest for two hours, this is a good time to make your gravy.

  7. Give the turkey blast in the oven without the foil 20 minutes before the Christmas dinner is served.
