Pork, Sage and Onion Stuffing by Delia Smith

With 67% of Brits having Turkey as the centrepiece of the Christmas meal, stuffing is an extremely important as it adds to the tradition of Christmas.

Nearly 50% of the people we surveyed in our ‘Christmas Dinner: How do you eat yours?’ survey said that they make stuffing from scratch for Christmas day, so here is a recipe to help those that don’t or want to try a new recipe this year.

Delia was voted as the most relied upon celeb chef at Christmas, so here’s a classic recipe from her:


  • 2 lb (900 g) good-quality pork sausagemeat
  • 1 oz (25 g) chopped fresh sage
  • 3 oz (75 g) white breadcrumbs (made from bread left out overnight - the best way to make breadcrumbs is in a blender, if you have one)
  • 1 large onion, very finely chopped
  • Salt and freshly milled black pepper
