Get creative with leftover Turkey this Christmas!

For many turkey sandwiches are the best thing about Christmas leftovers but if you do fancy something different try one of Chef Mark David’s delicious ideas…..

Turkey with mushrooms and a crème fraiche and sherry sauce

Serves about 8

Ingredients

  • Approx 1.3 kg cooked turkey meat, cut into cubes
  • 1 small onion, firmly chopped
  • 140ml chicken stock
  • 140ml sherry
  • A pinch of dried herbs
  • 3 tablespoons crème fraiche

Method

  1. Fry the onion in a little butter until soft

  2. Add the turkey and dried herbs, cook slowly for 2 minutes.

  3. Add the sherry and stock, simmer for 5 minutes. Then add the crème fraiche, simmer 5 minutes.

Coronation Chicken

Serves about 6

Ingredients

  • Approx 1.3 kg cooked turkey
  • 1 tablespoon mango chutney
  • 1 teaspoon curry powder
  • 2 tablespoons sherry
  • 6 tablespoons Hellman’s mayonnaise
  • I red chilli for garnish

Method

Mix all the ingredients together then add turkey and garnish with slices of red chilli.

Oriental turkey stir fry

Serves about 4

Ingredients

  • Approx 1.2 kg leftover turkey, diced
  • 3 spring onions, finely chopped
  • 1 tsp chopped fresh ginger
  • 2 cloves garlic finely chopped
  • 125 grams mangetout
  • 1 courgette, cut into small batons
  • 1 small packet beanshoots
  • 1 tablespoon plum sauce
  • 1 tablespoon light soy sauce
  • 2 tablespoons sherry
  • seasoning
  • 3 Tablespoons coconut milk
  • ½ teaspoon Chinese 5 spice powder
  • 1 tbsp vegetable oil
  •  

Method

  1. Fry the spring onion, garlic and ginger in the vegetable oil for 2 minutes.

  2. Add the Chinese 5 spice then all the other ingredients including the turkey, cook for about 5 minutes turning all the time.
