Mark Webb's Christmas Pudding Ice-cream recipe

The festive season is nearly upon us, so why not get creative this Christmas by making Chef Mark Webb's easy and delicious Christmas Pudding Ice-cream!

Christmas Pudding Ice-cream

6 medium egg yolks
2oz/60g castor sugar
½ pint/250ml double cream
½ pint/250ml milk
1 teaspoon vanilla extract
4oz/120g Xmas pudding, crumbled
1 measure brandy (small glass).

Method

  1. Make a custard by bringing the milk & cream slowly to the boil & whisking on to the egg yolks & sugar.
  2. Mix in the vanilla extract, brandy, & crumbed Xmas pudding.
  3. Cool to room temperature, (chill if you have time) and churn in an ice-cream machine.
